Steak Broiling in an Oven - Fun and Easy Way to Cook Steak

Steak broiling in an oven has to start with buying the meat you are going to broil. There are many sources of steak meat, some safer than others in terms of possibly harmful chemicals. The best meat for steak broiling in an oven should be taken from cows that have never been given antibiotics or hormones. How can we tell? The only way to know is to buy the meat from a store that you can trust. Your neighbors might know who these are.

The next consideration for steak broiling in an oven is whether you want to cook fresh meat or aged meat. Fresh meat will be a tougher than aged meat but they will be cheaper. Additionally, meat aged by drying is even softer than meat aged by soaking. Aged beef can cost as high as $20 per pound, considerably less than fresh beef.

For steak broiling in an oven, one of the best cuts is the Porterhouse steak. A slice of Porterhouse that is 2 inches thick and weighing a pound per inch is enough to give three diet servings or two non-diet portions of steak. Once cut into slices, you can marinate the steak in a mixture of soy sauce and lemon squeezing, to allow some flavor to soak into the meat. Then place it in the fridge or let it stand for a few minutes in the marinade if you are not ready for steak broiling in an oven.

For steak broiling in an oven, preheat the oven to its maximum temperature. Remove the meat from the fridge or take it out of the marinade and let it drip through a sieve into the sink. While the meat is draining or getting warmed to room temperature, watch the oven thermostat. When the thermostat indicates max temperature, preheat an iron pan over the full flame of a stove. If the pan isn’t seasoned or prebaked with oil in the oven, you will need to grease it slightly. Aged meat won’t need any grease.

Then, when the pan is heated sufficiently, place the steak on the pan and the pan on the oven rack. While steak broiling in an oven you can cook the steak rare, medium or well done, depending on the heat of the oven. Rare steak should be treated initially with high heat in order for the outer sides of the meat to cook faster than the inside. There should be about 550 degrees of heat. Carefully flip the steak over to the other side after four minutes. After steak broiling in an oven for another four minutes cut a shallow slice into the steak on its thicker side to sample it. If it is not yet to your liking, let it cook on both sides for about two minutes more. Then check again if it is cooked the way you want it to be.
