Oven Baked Ribs

What do you do when you simply love ribs; ribs of any kind that is, beef or pork, baby, back or spare, but do not have a BBQ pit in the back yard. You do it in the next best way possible and that is baking the ribs in the oven. Okay, so you don’t get that authentic smoky flavor you say; just try a smoky BBQ sauce or forget the smoke and bake the ribs in the oven. Take it slow and gentle, ribs cannot be rushed. The time taken to do it the right way will be well worth it in the end; Smoke or no smoke. Trust me.
Let’s see what we are going to require preparing the ribs in the oven. First of all, decide how much ribs will be needed? Remember, your oven baked ribs are going to taste absolutely delicious and out of this world and as such, everyone’s going to ask for seconds. Keeping that in mind and also any uninvited guest who might think of dropping in having got the smell of your cooking, you will have to think in terms of half a rack of ribs per person.
Get all equipment and ingredients ready before you start the main preparation so that you will not have to run around looking for this and that. You will need and Oven of course, large size roaster with rack, a big skillet, saucepan and a sheet of kitchen paper lined with foil.
The ingredients, apart from the ribs are very basic and easily found in any home. Ribs should be made ready by having the excess chunks of fat removed and cut into pieces. The rest of the ingredients consist of cooking oil, salt, pepper, 4 cups of a combination of beef broth and wine or water and a sweet and tangy BBQ sauce.
Method of Cooking
Rub both sides of the ribs with salt and pepper and keep aside. Heat a few tablespoons of oil in the skillet and place a few ribs at a time in the skillet turning them occasionally until the ribs turn a golden brown color. This does not mean that the ribs are cooked for the simple reason the meat on the underside of the ribs does not touch the pan due to the bone. Once the ribs start changing color remove from pan and place on the rack in the oven preheated to 250 degrees.
Heat oil to boiling point in the saucepan and pour the oil into the bottom of the roaster to cover it, cover the ribs and cook at a temperature of 250 degrees for about 2 hours and 45 minutes.
When the ribs are done, remove them from the oven, turn the broiler to high and place the rack a few inches away from the broiler. The ribs should be placed on the foil covered sheet of paper with the underside facing up. Brush the ribs with your favorite BBQ sauce and let it broil for a few minutes. Then take out the ribs and turn the other side, brush again with sauce and broil again while repeating this procedure until the ribs look crisp and brown.
Now you can lay the table, serve the ribs and wait for the compliments to come pouring in. Don’t forget to keep a large packet of paper serviettes on the table or you’ll end up having to clean the dining area as well.
