Delicious is nutritious. So the first consideration to broil a steak in the oven is the kind of meat you are going to cook. Plain beef with no guarantee for being antibiotic and hormone free, can be had at a cheaper price. Aged and natural beef without potentially harmful inclusions can go up to as high as $20 a pound. It’s your choice. To broil a steak in the oven, get your cuts directly from a butcher who raises the cows himself. Since this is a big IF for most city folks, the best you can do is to buy your cuts from a store or a butcher with a respected name.

One of the best prime cuts to broil a steak in the oven is a Porterhouse steak. To make two ample servings or three diet portions you will need at least 2 inches (weighing give or take, 2 pounds) of it. There are two choice ways to cut the T-bone or Porterhouse. You can get fillet strips or New York strips. If you want your steak with a strong flavor, marinate it for an hour in your favorite marinade before placing it in the refrigerator. For people who are watching their cholesterol intake, squeezing some lemon in will be good when they broil a steak in the oven.

When you are ready to broil a steak in the oven, remove the meat from the fridge. While the meat softens towards room temperature, preheat your oven. Place a rack about 5 inches more or less from its top and let it reach its highest temperature. When the oven is hot enough place an iron pan over a stove which has been adjusted to high heat, for about 5 minutes. To broil a steak in the oven, greasing the pan won’t be necessary if it has been seasoned well or if you are cooking aged meat.

To season the pan before you broil a steak in the oven, wash and dry the pan well. Apply a coating of cooking oil all over it and place in the center rack of the oven, face down. Bake the pan at 350 degrees for about an hour, placing something under it to catch the oil drippings.

To broil a steak in the oven, if the meat is still unflavored, do it now by sprinkling a little salt on it and, optionally, embedding black pepper and/or garlic bits. Put the meat on the pan and everything on the top rack of the oven.

To broil a steak in the oven the heat should be set according to how you want your stake cooked. Rare steak should be cooked at about 550 degrees to do the outside part faster. After about 4 minutes, flip the steak over to the other side and cook for another 4 minutes. Then take the pan out and slice into the thicker side of the steak to see if it is cooked the way you want it. If needed, put the pan back in the oven and repeat the previous, this time cooking both sides for a slightly shorter interval.

When the steak is done, carefully transfer it from the pan to your dinner plate and serve with mashed potatoes.
